In addition to researching products and consulting with its customers, DSM’s state-of-the-art facilities have capabilities that include slicing, dicing, portioning, trimming, grinding, marinating, and cooking.

RAW FACILITY
Opened: 2001
Specializes in slicing, dicing, portioning, trimming, grinding and marinating. With a staff of in-house consultants, programmers, analysts and food scientists, DSM uses technological innovations to differentiate itself within the industry. Direct Source Meats Raw is a 30,000 sq ft plant in San Antonio that further processes over 300,000 pounds of beef, pork, lamb, and poultry each week. Then, in 2008, Direct Source Meats expanded its reach as it oversaw the old Zanios processing facility located in Albuquerque, New Mexico. DSM-ABQ is a custom cut plant that also features a grinding operation. It is known for its delicious ground beef patties and the Native American Beef program.
COOK FACILITY
Opened: 2016
Specializes in fully cooked items including: barbacoa, smoked brisket, tamales, and kolaches. This leading edge facility is outfitted with the most advanced equipment. In June of 2016, DSM unveiled its cooking operation. DSM Cook is a state of the art, 60,000 sq ft plant that is located next to DSM Raw in San Antonio. It is equipped with a spiral freezer, x-ray machine, and hygienic air system. Its smokehouse and steam house were built in Germany. The plant was designed to produce safe, high quality protein items.
